Dried herbs, passionfruit, green apple skin and grass. The palate is hard and pointy - all things coming to a peak - angular. This is so intensely shaped that it almost moves into a new category of food matching. Aperitif for sure, and with a cleansing finish. Unripe nashi pear and white beach sand.

odd, slightly musty character, palate a bit hard, minerals / slate. . . mousse a touch coarse

lively fresh apple, and lemon zest. really refreshing on the palate with a good acidity line and nice biscuity notes in the back palate
