little corky scalping, very savoury acidity , needs osme flesh for the joy |
Dried herbs, passionfruit, green apple skin and grass. The palate is hard and pointy - all things coming to a peak - angular. This is so intensely shaped that it almost moves into a new category of food matching. Aperitif for sure, and with a cleansing finish. Unripe nashi pear and white beach sand. |
